We’re talking dates, peanut butter, banana, oats, almond meal, agave, mixed fruit and sea salt all in these easy almond oat cookies! Plus they are gluten free, dairy free and refined sugar free.
Oats, peanut butter, ground almonds and dried apples what’s not to like!?
Dates though, these are the star of the show!
Dates are amazing for your digestive system. They are one of the most anti-parasitical foods on the planet as they promote binding onto, destroying and removing parasites, yeast, mold and other fungus, heavy metals, unproductive bacteria, viruses and poisonous pathogens from your gut.
Not only that, they are rich in nearly 70 bioactive minerals that support your adrenal glands to help you handle life’s daily challenges!
In addition, dates are known for supporting your exercise and other adventures. Rightfully so as they have a very high amount of amino acids, which help to elevate the fruit’s potassium to it’s highest potential in sustaining and protecting muscles and nerves. This process also helps to stop lactic acid from taking over the body when it’s under stress.
So these cookies work well for a snack, an hour before exercise or just after you’ve finished your workout!
I would recommend batch making these and pulling them out of your freezer whenever you need.

Soak the dates in hot water for 10 minutes. Then food process them until they are in small pieces.⠀
Add the peanut butter and banana. Process until well combined.
Add the remaining ingredients and process until a dough forms. Once a dough has formed let it sit to harden for 10 minutes.⠀
Pre-heat your oven to 180c.
Split the dough into 8 and shape by hand or using cookie molds. Use whichever shapes and sizes you'd like!
Bake for 15 minutes until brown on the top. Once cooked let them sit and cool for 15 minutes before tucking in!⠀
